Spaghetti with Mushrooms and Onion

This is another one of my simple meals. I had never tried this before, but it came out really tasty. Just cook 4-6 ounces of mushrooms (I had 4 ounces leftover from the other day, but I would probably go with more than that next time) and a small chopped onion in olive oil over low heat until caramelized.

Meanwhile, cook one serving of spaghetti. When done, drain the pasta and pour it into the pan with the mushrooms and onion. Cook all together for another minute, and you're done. Serve with Italian bread, and all is well in the world.

The meal ended up costing me just 22 cents (for the onion) since I already had all the other items, so that's good too.

And for dessert, try some oatmeal!

Greek Pasta


This one is similar to my earlier all-oval meal with mushrooms. Instead, I replaced the mushrooms with black olives, ditched the garlic, and had feta instead of Parmesan cheese. Also, I cut things in half, so it wasn't quite as oval.

Some black olives cut in half
Some grape tomatoes cut in half
Olive oil
Feta Cheese
Pasta

Cook in olives and tomatoes in olive oil. Toss with pasta, and add feta at the end. Pretty simple, though possibly more advanced than bachelor chow.

Technicolour Dinner





This was one of my more colourful dinners ever. I simply sauteed some mushrooms, grape tomatoes, and garlic in olive oil and then served it with cheese tortellini. I think the blue Gatorade really pushed it over the top, colour-wise. In my defense, the Gatorade was free. I know, I know, a red Gatorade would have been more appropriate, but only the blue stuff was free.

It's the Right Thing to Do with Ice Cream

My Oatmeal-Ice Cream Dessert by Me

Ingredients
1. Oatmeal
2. Ice Cream

I came up with this idea entirely on my own, and I'm very proud of it. You take one Quaker flavored instant oatmeal pack. The Maple and Brown Sugar works best, though other flavors are good too. Add water and microwave for 60 seconds. Try not to add as much water as they say on the directions, because it's best if the oatmeal isn't too soupy. When it's done, add vanilla ice cream liberally, and serve (quickly). The ice cream will melt into the oatmeal, and it will be almost like a real dessert.

PS For dinner, I had porcini sauce that I bought at a specialty market and served it with angel air pasta.

Oyster Crackers

Ingredients:
Can of Smoked Oysters
Rosemary and Olive Oil Triscuits
Grape Tomatoes

Directions:
1. Place triscuit on plate.
2. Place two small smoked oysters on triscuit.
3. Place grape tomato on triscuit.
4. Place Oyster Tomato Triscuit in mouth.
5. Serve with playoff basketball game.
6. Repeat enough so that you end up considering this supper.

Questions:
1. Can this be considered a balanced meal with the sneaky inclusion of the tomato?
2. Would this be the first time such a snack was ever consumed during a playoff game?
3. If I had had potato chips in the house, would I probably have just ate them instead?

Quick 'N Easy Risotto

Well, since I'm a member of this here blog, and since I cooked something I've never cooked before, I figured I would post something. I've never made risotto before, and I think it turned out all right. I got the recipe off the lid of a Parmesan cheese container, which really is one step above using a recipe off the back of a Ritz cracker box. Admittedly, it was slightly bland. I had hoped the wine would give it more of a kick, but I still enjoyed it.

Here's the recipe, not so much because you'll want to try it, but this way I can throw out the lid.

2 Tbsp olive oil
1 cup chopped mushroom
1/3 cup chopped onion
1 cup long-grain rice, uncooked
1 1/2 cup water
1/2 cup dry white wine
3/4 cup parmesan cheese
1/4 cup milk

Heat oil on medium heat. Add mushrooms and onion. Cook and stir 5 minutes. Stir in rice, water, and wine. Bring to boil, cover. Reduce heat to low. Simmer 20 minutes or until rice is tender. Stir in 1/2 cup of cheese and milk. Serve with remaining cheese.

Makes 4 to 6 servings, though I pretty much ate half of it tonight. I'm not sure if you're supposed to have risotto as the main course, but that's how things turned out tonight.
